I have to admit I was surprised by the number of people that told me they enjoy reading my menu posts or they pass them a long to other people.
I am by no means doing anything revolutionary in the kitchen, but I love getting recipe ideas from other blogs, so it only makes sense that I am sharing some "new to you" recipes through my blog.
It's been a while since I've shared our menu on my blog, and really I've forgotten what I've cooked the past couple of weeks, but I want to share some of our favorite meals I've cooked lately.
First some recipes from skinnytaste.com. I can't stress enough how good Gina's recipes are. So yummy, she always finds a yummy way to get vegetables into recipes. I try and cook some of her recipes at least once or twice a week.
I absolutely love her Spinach Lasagna. I thought this was going to be perfect for Eli, but apparently he hates any tomato based pasta. Which is unfortunate.
These are soooo good. I prepare them just like it is listed on the website. Recipe here.
Last week I tried this Chicken and Broccoli Noodle casserole. It was really good also. Not my favorite and I probably won't put it into our rotation but still good nonetheless.
Tonight we had Cheesy Chicken and Wild Rice Casserole and it was sooo good! I made it last night and stuck it in the fridge and then put it in the oven when we got home.
The only change I made was I didn't put cheese on top of the casserole just to save calories.
So there are three easy and delicious recipes. I hope this gives someone out there a new meal idea this week!
